IMO they seem to have a good start in their methobs.. the whey for the chickens are from a local *cheese maker*..guess we won't know whether its organic or not. they also use *powdered milk*.

Do you know what whey is? Whether whey is organic would depend upon how it was made. Were the goats/cows raised organically? Then the whey would be organic.

you guys give the chickens whey ??? thats not even close to biodynamic.. its not even organic !!please look up the definition of biodynamic.

O.K., I have to admit I didn't know about the homeopathic manure or cosmic forces involved in a biodynamic farm, but I do believe this farm is in the 1st stage of being biodynamic and can only grow into what is right (and works) as time goes on.

Biodynamic is a farming method developed in the 1920's by Rudolf Steiner in Germany. It involves regarding your farm as a closed ecosystem and uses homeopathic manure preparations that accentuate the interaction between the farm and planetary/cosmic forces. A biodynamic farm produces food that is unsurpassed in quality and flavor and brings about an actual healing of the soil.

i'm just the guy who shot the video, but chef Chris, who recently passed away, started the restaurant 30 years ago. he was an amazing man whos eyes and conversation lit up the dining room. He once had an apprentice named John Besh (who he loved to tell stories about and always talked about taking over the restaurant) actually took over the restaurant recently. As i'm sure you know, John has his hands in alot of ventures so chef Steve runs the place. just ate there and had an amazing meal!
